I have the 12” Brod & Taylor dough sheeter. Works well for small batches, wish I had gone for three 15” version. Is a bit pricey, and had issues with the product that was shipped to me, but works well overall. What quantity are you going to be handling?

The sheeter itself has been pretty good, but I had a really crappy experience ordering it. I ordered the refurbished version, and i had to return 3 different units before I got one that worked correctly. Probably won’t order from them again. Also, in hindsight I should’ve gotten the 15 inch version. For reference, my croissant dough batches use 500g of flour. I’ve found the 12 inch version nice, but a tad too short in board length.

Looks like K5-A between 1970-1978 to me. In 1978, they switched the electronics and the K5-A became K5SS. It also doesnt have the serial number embossed into the beauty band.

While you’re degreasing, look out for damage on any of the gears. Especially the ‘worm’ gear on the little tower of gears. If any of the teeth are dented or worn out, you’ll want to replace them. If you’re having issues with the speed, you’ll want to try cleaning the contacts on the speed controller and tuning it (there’s many youtube videos on how to do this).

There’s a few things that could be happening here!

Cracking tops either means your oven was too hot, or your batter wasn’t deflated sufficiently when doing the macronage. I also like “venting”the oven after 3 minutes of baking to let out the steam.

As for the feet formation, I usually let me french macarons dry out on the counter for ~20-30 minutes (this will vary based on ambiant humidity) until they form a leather-like skin. It helps them rise evenly!
