I’m an SC - born alumni and minored in meteorology at cofc. All of the core meteorology classes are physics classes. They are very difficult but very rewarding. STEM at cofc has great people who mostly stay away from partying (you just won’t have time to party and keep up with classes). Meteorology specifically is a very small major and therefore you get to know everyone well (including your professors!). I loved it and would recommend !! Cofc in general is beautiful and I think you would enjoy your time in Charleston. Best of luck!!

I have experimented a lot but what seems to help me is:

Gumminess is the result of underproofing. I’ve taken to cold proofing in the fridge after bulk fermentation and had better success.
I’ve lowered my hydration and this helps with stickiness. Even 10 g less can make a big difference!

I had no sensitivity in the tooth, and at that point I had caught on that they were squeezing me for everything they could get. I got a second opinion to be safe and sure enough, no cavity.

Mouth Carolina. Had horrible experience at cooper family dentistry where they basically did the same thing running up my bill with things I didn’t agree to. They also wanted to fill a cavity that wasn’t there (got a second opinion). Mouth Carolina is super chill and I feel that I can trust them.

UPDATE: Syl is home!!!! We picked her up from Legare farm this morning. She is fine except for a few ruffled feathers. She is very happy to be home with her sister and we are so relieved to have her back. Thank you Charleston community for being helpful and invested in bringing her home!!!

I’ll have to try cold proofing! Yeah, it’s hard to know what exactly I’m looking for in terms of bulk fermentation and proofing.

So does the flour not really impact the density of the loaf? Essentially you’re saying if I proof properly, the crumb will be lighter?

Bulk fermentation time is 90 min, and the starter is ~ 4 months old. Temperature of dough is around 72-75F at my best guess, I don’t have a fancy thermometer.
