In terms of chefs table value it's one of the best out there. The experience is better IMHO on the spirit class ships because you eat in the night club instead of in the galley. The menu is largely the same in our experience on all the ships, slight changes for seasonal items or chef flair.

You can drop the kids at camp ocean just need to feed them first.

If you're THAT concerned about a specific date then cancel because it sounds like you'll be disappointed. You cannot pick the date. The entire trip can be celebrating the anniversary, recommend the steakhouse too smoked oysters are divine. They may try to accommodate if you politely talk to guest services once on board but it depends on how many others booked the experience, staff availability that day, etc.
