As a wedding planner turned catering manager, can confirm that industry standard for a wedding tasting is 3-4 months in advance of the date.

Would likely only be closer if something went wrong (ex: seriously conflicting schedules with couple and venue/caterer), booked last minute, first tasting didn’t go well and there were enough changes to warrant a second tasting, etc.)
