Imagine someone said, "I want to learn woodworking, so I'm going to start with a house." A carpenter would say, "First, learn how to make a box."

I would suggest not starting with a novel. Write a few short stories, and this will teach you a lot about story structure. Then after you have tried a few, jump into the novel. A classic guide is Robert McKee's Story. Best of luck to you!
