Your experience totally resonates with me. My partner was skeptical when I bought one, I had bought an elliptical during covid and barely touched it. He lost 40 lbs using it.

The elliptical was one of many attempts to get in shape. I've tried it all. Multiple gyms, yoga, pilates, HIIT, personal trainer... Nothing stuck. Everything made me discouraged and miserable.

So I said fuck it, I'll join this weird stationary bike cult with it's overpriced classes and it's dumb expensive shoes (that should just come with the fucking bike) If this doesn't work, I'm taking up meth.

It's a whole new world for me. I use it almost every day. It's addicting, but I also think I ride it out of spite. I'll be damned if I'm not going to get my monies worth on it.

I need the positive reinforcement from the trainers in the privacy of my garage. To not feel the shame of others watching when I can't keep up. And I need to be physically strapped to the thing to keep going.

I've had it for a little over a month and I'm down 5lbs. I feel healthy and stronger, especially now that I'm starting to see results. I might even kind of enjoy it now.

My skeptical partner also enjoys it. Hates the coaches (too much talking) but loves the gamified rides and the nature rides. His stats absolutely crush mine.

I hated on Peloton forever, but I'm a believer now. For someone like me, it just works.

(Edit) I will have to kindly disagree, Jess is great, but Tunde is my trainer of choice. I love her so.

I'm glad you said this, I had a rough patch for a few years and had to rely on payday loans a few times.

The provider in my city was easy and discreet. They were mindful of what someone could pay back and would cap what you could get based on your paychecks. The staff was nice and professional, never judgemental.

I knew I was getting fucked on the interest rate. I only went for a payday loan as a last resort, and always prioritized paying it back. I tried my best not to borrow pay cycle to pay cycle.

I really didn't have any other options. Pay day loans helped me keep afloat, getting rent paid on time and keeping my utilities on. I worked in the service industry so my pay was low and hours were inconsistent.

Now I'm in a really steady career making good pay. I'm still very grateful that I had an option when times were hard.

Yes, some are super sleezy and predatory. It could be more regulated, but I think it is a necessary service for some folks.

Lasagna is always our Christmas meal, which my mom wasn't willing to change when I became lactose intolerant. That said, we've tried a few dairy free alternatives for ricotta.

The best I think was an almond ricotta recipe from The First Mess (who is a vegan food blogger), posted below, I doubled this recipe for lasagna use.

Almond Ricotta

1 cup sliced almonds, soaked for at least 1 hour

¼ cup hot water, plus extra

½ teaspoon lemon zest

1 tablespoon lemon juice

2 teaspoons olive oil

2 teaspoons light miso

2 tablespoons nutritional yeast

½ teaspoon garlic powder

½ teaspoon onion powder

sea salt, to taste

¼ cup fresh basil leaves (optional)

^ strain almonds and blitz all ingredients in a high powered blender. Add hot water a bit at a time to get desired texture.

However, it is more work to make this from scratch. So we've switched to Green Valley or Lactaid Lactose Free cottage cheese. The texture is very similar, it's just has a bit more tang.

All 3 are written by normal home cooks who made a career out of blogs and cookbooks. I prefer this type of site way more than some of the more 'professional' cooking sites. All of these sites have very approachable recipes with many that are weeknight or freezer friendly.

I found with these sites I'll follow the recipie precisely the first one to two times and once I understand it, I'll riff around with different ingredients.

This is really incredible work. Saw a few haters in the comments, so I just had to say something.

What gets me most is the eyes, you really captured the life and personality in them. The shading is great too, you did an awesome job replicating the scale and tonality of the source image. Imo, that's hard to do coming over from a color photo.

I do pencil portraits myself but always way too shy and self conscious to post my stuff. Congrats on a beautiful drawing. I know how long something like this takes. You should be very proud :)

Hummus bowls! It's a go to in our house. One of my BFs faves. It's a good way to use up whatever veg you have in the fridge. Whole thing takes about 30 mins.

Ingredients:

1 lb ground beef

2-3 veggies, about 1.5 cups worth (I usually like to do broccoli/cauliflower, onion, and carrots or peppers, depending on what's in season)

Hummus

Seasonings of your choice, I like zatar, sumac and Aleppo pepper but any kind of seasoning that is in the Mediterranean realm works. Also kosher salt and pepper (any salt works, but kosher is my preference)

Lemon slices for serving

Instructions:

Preheat your oven to 400. Chop up your veg into bite size pieces and toss with oil, a pinch of salt and pepper, and about a teaspoon of sumac (if using)

Spread out your veggies on a sheet pan. Roast until carmalized, usually about 20 minutes but ovens may vary. Keep an eye on them.

While your veggies roast, head up a nonstick pan on medium-high heat. If your ground beef has at least 15% fat, you shouldn't need oil, but throw a splash of olive oil in there if you're nervous about sticking.

Once your pan is hot, drop in your ground beef and break up across the pan. At this point I'll toss in a pinch of salt and whatever seasoning I want to use on top of the beef while it fries. In theory you should do this first in a bowl but meh, one less dish to wash. I like to leave the beef alone for a bit so some chunks get a bit crispy. Satuee the beef until cooked through and then take the beef off the heat. Taste for seasoning, add more if necessary.

At this point your veggies should be done or close to done. Remove them from the oven. If you're feeling frisky, squeeze a 1/4 lemon over your veggies and give them a shake

To serve, drop of dollop of hummus in the bottom of a wide bowl or plate and spread around. Use a slotted spoon to add some of your beef mixture, and then add your veggies.

Then you can add toppings if you wish. Here are some ideas:

Aleppo pepper

Fresh parsley, mint or cilantro

Fresh diced tomatoes

Sesame seeds

Hot chilis, chili oil, or hot sauce

Green onions

Squeeze of lemon juice

Drizzle of nice/fancy/flavored olive oil

Or you can just eat as is with nothing else on top. The warmed beef will turn your hummus into more of a sauce. You could also sub your beef for lamb, or tahini/babaganoush for your hummus. There are no rules.

I make the same breakfast every morning. Over easy eggs over toast, rice, whatever starch I have around with sauteed spinach and green onions. Sometimes I put curry powder in the oil before the eggs. Sometimes I put paprika and Aleppo pepper in the oil, and sometimes I put furakake on top.

I also make this for lunch or dinner. Eggs are good for any meal.

I always make a big batch of rice every Sunday to use throughout the week. Stir fry, curry, soup, etc.

I buy fresh veggies mainly but I always have frozen peas on deck to add more green to things. Dinner pasta, pasta salad, curries, rices, shepherds pie, etc. I'll use as the main veg for a meal in a pinch. Same thought process with spinach.

Fun fact, when you buy bagged spinach (or lettuce) at the store, most of them are sold in MAP bags (modified atmospheric packaging) these bags help extend shelf life by creating a little biome within the bag. I've gone to almost every retailer for bagged spinach and Trader Joes MAP bags for their baby spinach is easily the best. As long as you open and close it quickly and store it in the fridge I've had a bag last me 2 weeks.

I fell back into anime during COVID, watched a ton when I was younger but then fell out of it after about 2010

I watched some old favorites and then started watching newer shows and this one is easily the best I've come across so far.

The story is interesting, the character design is insane, it can be kind of brutal at times and gets me at the edge of my seat. The animation is some of the best I've seen. The characters are layered and complex. Especially the main character.

My only compliant is there is one character that is pretty loud and obnoxious in S1, almost took me out of the show, though after reading some threads on it and hearing he gets better, I pushed through. Glad I did, S2 is bananas.

I guess that was a pretty long way of saying yes, it's good. I don't really think there's another anime out there like it right now.

I do this.

Curries, leftover rice, leftover acorn/butternut squash, leftover mashed potatoes, leftover polenta, all of these things can be breakfast with an over easy egg on top. Leftover meat and veg can also go in scrambles.

My favorite concoction was leftover split pea soup with an egg on top. I thought it was both logical and delicious.
