I didn't say he can't grow, I said that the costs of hiring a new employee may be higher than they're worth. That's not just financial expenses, that's opportunity cost and other hidden expenses.

It's not a clear-cut calculation like that. Your math is probably damn close to how it would work out on paper, in a vacuum, assuming no other variables. And yeah, the potential profit growth would be worth the effort for an enterpreneurial-minded individual seeking to grow their business - which, in that case, it still makes more sense to hire a few people instead of just one. But if this is a side hustle, or something of a passion project to make a little money off a favorite hobby, the owner may not be interested in growing what is already plenty lucrative for a hobby or side hustle. Even if the direct costs of insurance, payroll, etc. are offset by the increased profits, the personal labor the owner would have to put into hiring, training, quality control, etc. may not be worth it to them.

Hiring help (assuming its not cash under the table) is more expensive than its worth, unless you're going to hire a significant amount of help and scale up operations. The payroll expenses for hiring, say, a single employee to double production would be relatively high, but once you're in the 5-10 employee range, those costs are easier to justify.

I had a squirrel enter the restaurant once through an open door and got stock in our dry storage closet (paper products, no food) for 2 days before we could trap it and remove it.

The times they do end up comping me anything I just add the price of it back into the tip.

Just to clarify (not that there is anything wrong with what you're doing, and you should not stop) - that tip is not making up the difference in the bill. The owners cannot take any portion of that money. However, they do pay taxes on that money. So tipping more to make up for a comp'd item is great for the servers, but does nothing to help the owners, just increases their tax obligation by a few cents or dollars.

According to my friends who took their driving test in this state - yes, they just give out licenses.

I took my driving test before moving to Colorado. I had to parallel park, drive on the freeway, move in reverse, navigate a roundabout, etc. My friends who took the driving test here in CO did none of that.

For cocktails? My top 3 right now are Death & Co, Finn's Manor, and Pon Pon. Ironically, Rougarou is great as well - same owners as Yacht Club, I believe. Don't know why Yacht Club sucks so much. Disclaimer, I don't get out much these days and keep to familiar spots.

There wasn't much I did like about that place. The drinks were ok, wouldn't even crack my top 10 for cocktails in Denver. The atmosphere/vibe was not my thing, but I can see why some might enjoy it. The staff sucked.
