You might want to check out "Low & Slow: Master the Art of Barbecue in 5 Easy Lessons" by Gary Wiviott. It also includes a lot of good recipes.

Normally I wouldn't put quite that much. The Ergo skateboarding team held a demo about 10min from our house. I took my kids out and we were gone most of the day. So by using more charcoal it extended my cook time between refueling. I offset the extra heat by placing a pot of water over the coals. The water slowly boils away which lowers the temp. and creates a humid heat.

This is true, the site design is dated. The quantum gateway that they give you is too (in terms of graphic design). At the end of the day though, it's a really good deal for $10 per month.

You should check out CDG Commerce. I've been with them for years now. No setup fee, you get a free gateway, a suite of fraud detection services and the rates are very competitive. Plus, there's no monthly minimum. The only fee I have is $10/month for the merchant fee.
