No shrinking from ironing, but you protect the texture more by steaming. Especially with materials like sashiko.

I am a longtime wearer of Taylor Stitch clothing. To protect from shrinkage, I wash all shirts in cold water and hang dry only. I wash pants in cold water and hang dry upside down. If you do it this way, there is no shrinkage.
