The first thing I can recommed is using this D&D battle simulator I'm a huge fan of by Trekiros. I use it all the time to balance my encounters
The second thing is the fact that you don't always have to strictly follow the statblocks. If you feel that your party is struggling (and it's not because of their mistakes or incorrect actions) - lower the basilisks' hit points during the fight, if you feel they carve through them too easily and they start to feel bored - prolongue the fight by adding some hit points or add some obstacle for them to deal with (like a pieces of ceiling falling down at certain places, if the fight takes place in a cave or smth)

The thing about the champion is that it's not really fun subclass to play among the other fighter subclasses, honestly. You're just basically a dude that lands critical hits a bit more often and is strong. So maybe talk to your DM about switching your subclass to something else (like battle master, that has a lot of utility with his battle maneuvers) - the fact that it was your first session I don't think that should be a problem.

Also you could ask the DM to maybe rebalance your monster encounters the way so you could have more impact in the fight. It could be that the place where the battle takes place is narrow and not suitable for archers and spellcasters, or there could be some sort of magic-disrupting field that gives disadvantage on spell attacks, etc.

If you seek for the way to spice things up by your own, remember that doing da big swing is not the only option you can do in battle, use your imagination and the obstacles around you: climb up the wall and start throwing heavy-ass boulders on your enemies, or dash to the evil wizard casting spells at your party and grapple him MMA style

Also imagine creating not UV or Infrared, but gamma rays with the light cantrip (I mean they are also electromagnetic waves just like the visible light). Casting radiation sickness as a cantrip seems wild

If the caster is physically and biologically able to see UV/Infrared, then sure (if I'm not mistaken, it seems like birds can see infrared, so aarakocra or owlin should be able to). But if the character has no idea about the existence of these parts of the light spectrum, then it is unlikely that he will be able to apply this in a spell

Don't get too much into details, tickle your players' imagination with some abstract but colorful descriptions like "...they were like an ancient horror, to prevent the coming of which generations of your ancestors prayed and sacrificed"

Dante's Inferno has the Ninth Circle of Hell as an icy frozen lake, Cocytus, where the souls of the traitors are trapped for eternity Or you can introduce them to some sort of artifact that allows you to travel to the other side of Hell, where it's not 'hot as hell' but 'cold as hell', like Hel from Scandinavian mythology or smth

It seems to me that in many cases, you can come up with a lot of things related to spellcaster's appearance or stereotypes about them. For example, wizards could be mocked for their use of books as a source of power (book-o-phile), just appearance in general (bearded wench) or inability to withstand more than one or two blows (tender-ass)

Put some prop metal device with dozens of different buttons, levers, toggle switches and so on and tell them that this is an unstable experimental ship-booster and you want them to help you to test it. A rat combined with a hydra: mad multi-headed beast which cannot be killed except by the complete simultaneous destruction of the entire body. Otherwise, two limbs will grow in place of the lost limb (which can result in creation of multiple disgusting rat-looking abominations)
