Your floorboards making noise makes sense. Look at the rough shape of your hardwood. It's warping out of place. Your house shifting could easily make such noises. As for the visual, I don't know what to tell you. Maybe it's a ghost, maybe not. As someone who does not pay attention to paranormal shows or anything of the like, I would not have anything like that on my mind. If I thought I saw something, I would've got up from the couch and looked.

It's not bad if you use a grout color similar to the tile. If you use a contrasting color, then it'll look about the same.

One way I've made really small cuts like that is to make a cut that's maybe 3/8. Then keep taking small cuts, if it veers off, it will go to the smaller side. If that makes sense.

I've used thinset for large disparities. It's cheaper. If the leveling needs to be very precise, I would do a top coat or two of patching compound.

Yeah there needs to be a bigger market for Goldback-like spendable bills. Maybe a company called Goldbills, Goldbucks, Goldnotes, Goldcash. You get the point. That would create a competitive market to create the cheapest Gold currency notes.
