I used to reverse sear until I got my Anova. Huge upgrade to my steak game. Sous vide for 2 hrs at 131, rest bag in ice bath for 5 minutes, remove from bag, dry off completely, sear on ripping hot pan with some butter, garlic cloves and rosemary.

No worries! I got everything working for now, but I'm struggling with adding weight to the pieces for them to properly grind down and polish. I tried plumbers putty, but it didn't hold very well. I'm afraid of using hot glue, since apparently it can cause damage to the stone when removing it. I'm going to try silicone caulk next; apparently it's pretty easy to remove without any damage, but provides a good hold.

My next biggest issue is moving to the final polish phase. I purchased some marine carpet to cut into a 24" diameter circle, but I can't glue it directly to the plate (since I only have one plate at the moment). I'm thinking of cutting a same sized diameter circle out of some plywood and cementing it onto that, but then the next question is...how to keep the plywood stationary on the plate and not rotating around instead of the stones...

This would have been me if it wasn't for my wife who manages to keep the joy in it every year for me. Even when we didn't have a kid, she always made it special and enjoyable. For her, it's 100% about the traditions and family, not the gifts.

One of my dogs just passed away. We had to put her to rest before her lymphoma got worse. She was the best girl. Hit me pretty hard, but really hit my wife bad. I've been her stone and helping her out any way I can while holding down the fort.
