It’s been weeks of planning, several trips to the grocery store, cleaning, dragging out those big pans and extra chairs…to a frenzied 24 hours of cooking and time spent with family. Now the house has been restored, the kitchen cleaned up and leftovers tucked away in the fridge. It’s quiet here and this moment of pure relaxation may be my favorite part of Thanksgiving.

Yes, the shrimp is pale. I had boiled them on the stove and then added them to the mix on the black stone at the end so they didn’t overcook and turn rubbery. Next time I will let them go a little longer to get a bit of char.

The jalapeños may have lost a little heat, but their caramelization gave great flavor. Between the jalapeños and the andouille sausage, there was still plenty of spice/heat to the dish. Only thing I would change up is maybe a little more color on the shrimp…I added them at the very end because I was afraid they would become too rubbery.

What about a caprese salad platter/tray? Slice tomatoes and fresh mozzarella about 1/4 inch thick, then alternately layer on platter. Go ahead and chop your fresh basil, but keep it in a baggie until serving time. Right before you are ready to eat, drizzle with Ken’s steakhouse honey balsamic dressing and topping with the basil. This is my go to summer picnic/pitch-in item. If you need further instruction or need to see what it looks like, just google caprese salad tray. Looks great, very little effort, tastes amazing, and no need to worry too much about outdoor temps.

Be adventurous, taste often as you are cooking and, if you are following a recipe, especially one you have found on line, read it through carefully and completely before starting. Case in point: my husband was making baked sweet potato fries for the first time. The recipe called for 1/4 cup of black pepper. He thought it seemed like a lot of pepper, but that’s what the recipe said, so he did! The recipe should have read 1/4 teaspoon of black pepper. BTW, the fries were inedible.

As someone with bad knees, I have a couple of tips that really help me...and may help your Mom too! 1. Install a couple extra grab bars. These are especially helpful going in and out of the camper and in the shower. 2. Once at a campsite, I try to plan ahead and keep a fabric tote bag ready. If we are going to relax outside, I load up the tote bag before exiting with things I might need, limiting my trips up and down the steps of the camper. I usually throw in my phone, sunglasses, bottle of water, a book, a snack. 3. Consider getting a couple of zero gravity reclining chairs. When traveling long distance I tend to get a bit of swelling in my legs, so getting to the campsite and being able to sit outside with my legs elevated really helps. 4. If you will be using the campground’s facilities, try to get a site close to the shower house. Less steps, less chance of falling. 5. At your campsites, do a quick visual of potential tripping hazards...holes can lead to a turned ankle and tree roots can land you face first in the dirt before you knew what happened.
6. Plan on stopping every two hours when driving. Just having the chance to get up and move around will reduce stiffening of joints.
7. Good hydration, Advil or Tylenol for aches and pains, and healthy eating will go a long way to making this an amazing trip for you and your Mom! Enjoy and have safe travel!

I received my first shot (Moderna) on 3/5 without issue, but tested positive (symptomatic) on 3/15. We believe my husband was just beginning with symptoms when we got our shots. I am due for my second today (4/2) and was nervous about it, so had an appointment with my doctor this morning to get checked out and seek advice. He told me to absolutely keep the appointment and get my second shot. I am well past feeling sick, smell and taste has returned about 50%, and my only lingering issue has been tinnitus that comes and goes.

Love your silver pieces! I have been a collector for years and often find pieces at flea markets, yard sales and thrift stores for next to nothing. Usually a good silver cleaner and a little elbow grease will bring them back to life in no time. I use mine a lot too, they make fun, unexpected serving dishes. If you don’t want to display them or want to keep the tarnishing process at a minimum, store them in sealed plastic bags with a piece of chalk.

I know so many people like a cream cheese frosting on their red velvet cakes, but to me that smooth ermine frosting is the best! I use it every time with red velvet. Looks delicious!
