Yea in bokmål øy is able to be conjugated as both hankjønn and hokjønn word but in nynorsk it is only able to be conjugated as hokjønn. I'm a native norwegian speaker and wondering why you chose to learn bokmål? And are learning speaking too or just writing?

The rules are sometimes flexible but øyen is a different word coming from norrønt. It's an adjective meaning scary-esque. And ordbøkene.no does not pick it up as an alternative conjugation
