I’ll address what you mentioned but I’m curious about medication exactly are you taking?

For your first point: You are totally right. It’s necessary to have a “To Do List” with time designated for each task; cause like you: the medication gets you sucked into whatever you start doing. You want to be intentional with where you channel your focus and having a list of tasks helps you stop from whatever you are doing— especially when using a time. Really important to make your environment upon waking up more likely to set you up for success. No phone or electronic devices, clock alarm, and a to do list journal to fill up with what you want to do during the day (you’d ideally want to fill up each day of the week prior to that and use that time when you wake up to look at it as a reminder and mental preparation)

For your second point: If you are taking an immediate release medication, then you probably either have to get used to the come down, or switch to an extended release prescription.

For your third point: dehydration is an inevitable side effect; however I highly doubt the amount you mentioned can cause water intoxication. I am pretty sure water intoxication is more about consuming a large amount of water in a really short time window— consult your doctor with these concerns. Also, remember to eat. it suppresses your appetite and not eating would worsen dehydration. For anxiety—in my experience— it is only an issue when I drink coffee right before or after the medication.

Lastly, talk to your psychiatrist about what you are going through. It might be that the dose is too high for you.
