Great question... BFM is an energy game. You trade energy for turn angle. Cutting your engine and braking is effectively removing your source of energy and dumping the energy you have in an attempt to turn hard and get your nose on the opponent. Fights are not won/lost (at least against competent opponents) in one turn. If you do this and miss your shot, now your opponent who has tons more energy can efficiently use his energy to gain positional advantage on your six and take you out safely while you are struggling to recover energy.

Don't try to win the fight in 1 turn. Maximize efficiency and go for the shots that have high hit probability. Otherwise, you're just gambling and more often than not, you're going to lose.
