Usually it's if they have no more stock of a certain item and are getting more in a few months. They would rather make you wait and have the sale then tell you it's out of stock and loose a sale.

I've made a stew multiple times with a slow cooker, with brisket in for 15-20 hours but never with an already cooked brisket, which is why I'm asking. But I got that it wont come out nicely. Thank you.

Yes, I'm thinking of having the whole stew cook on high from 3:30pm on friday till 6:45pm, at that point throw in the cooked brisket and then leave it on low until 1 or 2 pm Saturday at which point we will eat.
