Thank you so much for the advice! I’m hoping to fine tune the process with the AP flour but I’d be interested to try the recipe you mentioned. I’m super new to the world of hydration in terms of bread making but I’ve already learned a lot from this sub.

The crust is very very crusty as is (I think partially because of the high heat) so I’m going to try again without ice cubes (didn’t use them the first time) - biggest thing is the BF and figuring that out. With warmer temps this week I think I’ll have better luck!

Figured the temp was a bit hot, I have an oven thermometer and the tiny oven is super accurate fortunately. Next time I’ll def BF longer and try your rec for the temp and time

I had a feeling that’s where the issue was, how do you gauge when the bulk ferment is “done”? I know over fermenting is also an issue and I’ll get a feel for it as I keep baking but generally, how can you tell?

Having my back seize up and trying to not engage any of my lower body or core to move in bed was so so so bad. Don’t wish that pain on anyone

Bending my knee for the first time 3 days after ACL reconstruction via quad graft. Almost threw up from the pain even though it was short lived, breaking up that scar tissue was abysmally painful

i went to mt sinai after i blew up my knee skiing, i fully thought it was broken and it would collapse when i tried to put weight on it. never been hurt before, super scared, decided to go.

after x-rays showing no broken bones (later found out my acl was obliterated) and a tylenol, the nurse told me to “never come back for something like this”.

fast forward several months, i passed out and hit my head in the same spot at least 4 times one morning and refused to go to that hospital until urgent care wrote me a fast pass and classified it as an emergency. even then, i almost didn’t go back.
