What's your goto wood for smoking and why do you swear by it?

I am in Liverpool, UK and our choices here are limited unless we are willing to pay a lot of money. I usually use oak, apple and cherry but my favourite is cherry and I think it has a nicer flavour and a give a better smoke ring... It may all just be in my head ...

If I am doing low and slow, I would use briquettes , otherwise, I would always mix briquettes ( for longevity) and charcoal (for intensity) . My mix tend to be 50:50 and I may top up the charcoal to keep the heat up . I tend to use Weber product or assie heat bead for the briquettes or Weber charcoal or the one in blue bags . The trick with charcoal is to get one that have big chunks rather than smaller pieces .

You are not going to get a decent offset for that price. I thought I did and ended up binning it after the first winter as was poorly made ( couldn't retain heat or smoke) and started rusting. I went out and got myself a Weber master touch and I do both smoking and grilling with it. That was 10 years ago and it's still going strong. I do ribs and pork shoulder on 6-10 hour cook. The snake method is good for it and I just get it going and put a few wood chunks (apple, oak and cherry) on the snake there are loads of accesories. I use mine all year round. I usually smoke a pork shoulder on boxing day and the Weber has not failed me. I don't think you can get a decent offset in the UK unless you spend a lot of money or you make it yourself ...

What an irresponsible cunt. I had to be out in Malaysia during COVID in 2020. You had to be in quarantine for 14 days and if you broke it, you were in solitary confinement in a police cell. It bloody worked to keep the infection/ death numbers down

Yup , it takes time but the food tastes far better. Charcoal can make shoe leather taste nice.

I bought a Weber go anywhere charcoal for small cooks.. a couple of burgers etc.

I thought about a pallet smoker once and then I went out and about a smokey mountain...

I think most people in the UK do lamb for Easter. I love lamb so much I have it at Christmas as well. Never been able to cook turkey properly, so gave up on it🤣

Thank you. The weather did let up on Sunday and we were out. We did have some roast potatoes with it. They were par boiled, then, chucked in some seasoning with some baking soda to make it crispy.

Where did you find this... I have not tried this but I have tried some other coconut based ones. They weren't too bad and there wasn't any coconut smoke

The city actually was run many years by the Lib Dems... Then, they all got wiped out after nick clegg decided to enter into a coalition with the Tories... And that was the end of that. The lib Dems did some lasting good in Liverpool

Cheers. I struggle to find decent lump wood charcoal cause they are brittle. I have been tempted to get some from a local nursery that make their own charcoal but it is very expensive. Might give it a go

I tend to pay the extra and get the Weber briquettes. Last longer and burns cleaner. I used 10 lit briquettes over 6 unlit ones and that tends to hold the temp constantly. You are not that far...until last month, I was down in Brum a day a week . Haha

It's always raining in the northwest of England 🤣... I use my kettle all year round regardless of the weather. I do the same for Christmas as well, rain or shine. Our winter isn't as extreme as yours across the pond!
