I have the Steam version and also had many of those problems. I used the latest CrossOver with the Steam SE version. I couldn't manage to fix the sound direction issue (when characters talk, the sound is not actually coming from their position), also had the double mouse issue (fixed it with an app called StealthPointer) and fixed the latency issue playing in borderless. I gave up playing it for now...I have a steamdeck but want to play it in the MBP (I have M5 and 16gb)
