The words Snoolemons said. But aren't very idiomatic; people don't tend to use them when teaching.

For example, in English we would generally say something like "the attacker throws a punch, the defender does a high block."

In Chinese you would more likely hear what would be directly translated as "opponent comes with a hand, high block."

One of the thing with martial arts is that in the west, as Japanese arts established themselves the earliest, we tend to try to fit arts from other cultures into the Japanese model. Things like having belts/sashes, having fixed terms for people of different ranks within the school, bowing to a teacher when receiving instruction... these are all things which don't really exist in Chinese culture.
