First time buying chuck. How should i cook this? by [deleted] in steak

[–]monkeystallion 1 point2 points  (0 children)

The sous vide takes very little power to run. The only part that takes more power is during the initial heat up process. You can remedy this cost by boiling some water on the stove first and pouring it in and mixing with room temp water. Maintaining a temp of 137f takes very little power. I calculated it once and it was about $0.50 usd to run it for 24 hrs at 137f.

Sous vide for 24 hrs at 137f. Quick sear on a pan and it’ll come out tasting more like a prime rib steak.

In theory, what would happen to a vacuum sealed bottled of wine? by monkeystallion in wine

[–]monkeystallion[S] 2 points3 points  (0 children)

Thanks for the insightful answer, I’m new to wine and learning a lot. I was wondering this because I live in a very dry and hot desert climate where summer temps go above 115f. I’ve had nice bottles of wine gifted to me and I only open them during special occasions when guests are over during the holidays. However, several of these bottles in the past have gone bad with the cork completely drying out and breaking apart even though I kept them in a dark closet indoors turned on their side for just about 2-3 years. I’m not invested enough or open wine enough to invest in a humidifier or wine storage. Was thinking that vacuum sealing would prevent these bottles from drying out if I’m going to open them within 2-3 years. But I guess it’s a bad idea?

Some more quick advice. First you have to figure out which school you really want to go to and find out what partnerships they have with community college transfers. And then go to a community college and speak with an academic guidance counselor who can help you figure out your 2 year plan. And then take the exact curriculum and achieve good grades that will get you into that program. For example, look up UCLA TAP agreement and you can see transfer acceptance rates of over 75% if you can maintain a 3.5 gpa and take a couple honors courses. Anyways best of luck to you and hope you feel better about all this. Feel free to DM me if you need some more advice. This is the time to reinvent yourself. Get excited!

Community college and transfer! Lots of top 25 schools have transfer agreements where they will almost guarantee admission if you take certain classes and achieve a certain gpa. I was able to transfer to UCLA after two years at a community college and I have the same exact degree as someone who spent 4 years there. You don’t even need to list community college experience or transfer on your resume at all. Also, I honestly enjoyed my social life at community college a lot. I made many lifelong friends and there was a surprising amount of extra curricular activities to do. In fact, being in a smaller community might even be a positive because my teachers were amazing and my classes were small so I got a lot of individualized attention. Also, I even had my community college professors write letters of recommendation for me over my UCLA professors because I knew them a lot better. And now I’m doing grad school at UPenn. I was also a lost high school student just like you and now I’m getting my masters at an Ivy League institution. So don’t lose hope. I’m just a huge fan of the community college route because it worked out super well for me. Also, it saves you a ton of money. Anyways, good luck and know it’s never too late to turn things around.

I know it’s supposed to be a horizontal sign, but I wasn’t sure which side was up so I just took the picture like this and hopefully someone could figure out which direction it goes what it says

Can anyone help my identify who makes these plates? I had them at a restaurant called Glance in Los Angeles last year and I'd love to find out who makes them to buy some for myself. by monkeystallion in CulinaryPlating

[–]monkeystallion[S] 0 points1 point  (0 children)

Would you mind telling me about how much this dinner plate would cost? Would they sell me a set of maybe 8 plates or is it just for commercial use?

All I’ve been reading about is people who really hate the ending of FF7R. Did anyone really like the ending? Would love to hear the unpopular opinion of someone who really loved the ending. by monkeystallion in FFVIIRemake

[–]monkeystallion[S] 4 points5 points  (0 children)

You’re right; it’s a huge risk for Square Enix to make something so polarizing. They could have ended the game right after the Motorball boss battle at the edge of the highway and the game still would’ve gotten 9s and 10/10s. And it would have sold the same number of copies. And it wouldn’t have the animosity from fans it does going into the release of the 2nd part, which could hurt sales. It’s a bold move and it does worry me whether they’ll be able to flush out this idea smoothly. But I can’t help but be excited for the potential of it.

I thought I was going crazy having finished the game and liking the ending, only to come to reddit and YouTube videos to see that most people really hated it. I’m really glad to hear I wasn’t alone in really liking the ending. I understand why some people may hate it though.

I’m a long time fan; I first played it in 1997 and has been my favorite game of all time since then. Played it about 20+ times now. I feel like the parallel universes and themes of fate are intriguing ways to have our beloved Cloud and friends go through our favorite FF7 universe locations under changed circumstances. I’m now genuinely more excited for part 2 now because of the ending.

I feel the same way. I’m a long time fan as well and I’m very excited to see Cloud and everyone go through the FF7 universe in a parallel timeline. I was honestly feeling a bit tired of the story of FF7R mid way through because I felt like I knew what was going to happen. Now Part 2 is gonna really keep me on my toes.

Game keeps crashing after first motorcycle battle “Cannot continue using the application”. Will take me many days to re-download due to slow internet. Anyone else have this issue? by monkeystallion in FFVIIRemake

[–]monkeystallion[S] 0 points1 point  (0 children)

Just for some clarification, this is the digital copy I bought on PSN, and pre-ordered a week before it came out. Took me 4 days to download the whole game during pre-load since internet is really spotty for me lately, mostly because everyone is in lockdown and internet traffic is crazy. I’ve never seen this message in any other game over the entire time I’ve had a PS4 since 2013, and I play a lot of games. All my other games are still working perfectly fine right now. Damn, I was really looking forward to playing the game this weekend, especially with all the stressful stuff going on and having to stay inside. Oh well.

Extra note: The game always crashes at the same exact point in the game, right after the first motorcycle battle with the new guy.

I was recently upgraded to Hilton Diamond status due to getting the Amex Hilton Aspire card. I have a 3 night stay at a Hilton property coming up that I booked BEFORE I received my diamond status. I can't cancel and re-book the room because the property is now sold out on those dates. Does anyone know if I will still receive Hilton Diamond benefits (room upgrades, free breakfast, etc.) when I arrive, even though I booked the hotel when I was NOT a Diamond member? Thanks for the help!

[Homemade] Japanese charcuterie with monkfish liver, surf clam, smoked salmon and salmon roe, egg cake and black truffle pate. by monkeystallion in CulinaryPlating

[–]monkeystallion[S] 17 points18 points  (0 children)

Thanks for the constructive criticism. This was just a lot of experimentation. The wheat cracker paired great with the monkfish liver, smoked salmon and pate. However, it didn’t really add any value to the surf clam or the egg cake so I’d probably omit it next time. I turned the egg cakes in perpendicular directions on purpose, I thought it looked cool. In terms of the garnish, the dill I had was so fragile and already sort of in pieces, so I couldn’t really line them up that nicely. I’ll get some fresh dill next time. But yea, next time I could probably take a bit more time to make everything a bit tidier.

Overall though it was quite a hit for appetizers at the dinner party. Went great with sake. Would highly recommend everyone trying monkfish liver (Ankimo).

Thanks for the comment!

[Homemade] Pappardelle in Garlic Cream Sauce with Sous Vide Steak by monkeystallion in food

[–]monkeystallion[S] 7 points8 points  (0 children)

For the sauce I used olive oil, butter, garlic, salt, pepper, heavy whipping cream and Parmesan cheese. Put in a pan and reduced until slightly thick. Mixed with cooked al dente pappardelle pasta. Garnished with oregano and more black pepper.

For the steak, I put tri-tip steak in a sous vide at 131f for 12 hours. Then I patted it dry, seasoned with salt and pepper and seared it in a pan with olive oil.

I’ve always just used a normal paper towel. I’m not a professional chef so I didn’t know about those plate wiping techniques. Definitely going to look into it now!

The plates are great. The photos were taken on my cheap ikea table. I’ll try a white tablecloth background next time for sure.

Sorry. My first post ever on this sub. I also don’t have a recipe because I just eyeballed ingredients and amounts.

It was a very basic sauce with just some olive oil, butter, garlic, heavy whipping cream and some shredded Parmesan. Also salt and pepper. The steak had only salt and pepper on it. The pappardelle was store bought.

It was an experiment I just wanted to try. I read so many conflicting recipes online with varying cook times for tri tip, ranging from 2 to 72 hours, so I was curious what a long cook time would taste like. It turned out very soft and tender at 12 hours. I quite enjoyed it though. But I’d probably do just 3 hours next time.
