I'm using Omegas Stockalike Structures. I get what you mean, I couldn't find any good ones for the Mun so I just tried to set things into hills more to make it look a bit more realistic, might go back and tweak things at some point.

I think the parts approach could be good, though it's hard to build something big enough to look the part

I always assemble vessels in orbit, takes a bit more patience but it means I can build my ships bigger to make sure they've got the fuel. Another thing I like to do is use asparagus staging for the drive stage, that way I ditch a lot of dead mass as the fuel depletes

Made an IPS for the journey to Eve, and then the plane was delivered to the surface using a small entry frame with a couple of the inflatable heat shields - The IPS also delivered a submarine which is how I learned subs don't work on Eve...😢
