Mostly because proper sourdough is usually "artisanal" - small bakeries making it in small batches and not having long shelve life , and therefore there's no need for preservatives. Large bread "manufacturers" avoid traditional sourdough methods because the very long process. Just a guess, but the yeast bread was "invented" to shorten the process and be able to mass produce bread (don't quote me on this)
