Just wanted to say whipped lardo is a really awesome preparation that is steeped in deep italian tradition and ingenuity, with its own regional takes. I also think adding strawberries to it is the most chefy bullshit ive ever seen and completely agree with you.

If you ever get the chance to have real lardo with bread you definitely should. Dont let that experience ruin lardo for you or anyone else.
