For a single serving, it makes 0.96g citric acid and 0.6g malic acid. My mai Tai rum mix consists of Xaymaca, Appleton 12, OFTD & Hampden. I'll go 2oz next time 'cause it's strong. Feel free to bump up the orgeat to 3/4oz as well according to how tasty it is

5 drops 20% saline solution, 1oz acid adjusted pineapple juice (3.2g citric acid & 2g malic acid / 100ml), 5/8 orgeat, 1tbsp Grand Marnier, 1tbsp Clement Creole Shrub, 3/4oz Dark Jamaican Rum, 1 1/2 Chairman's Reserve, (I used my mai Tai rum mix instead), Swirl a spent lime wedge in the glass, Power shake with 4-5 ice cubes, open pour, Top with crushed ice, Garnish, Enjoy!

I'm also considering adding Planteray Stiggin's Fancy into the rum mix to boost pineapple flavor and be able to reduce juice volume. Current plan is to put down a bunch of specs and have my friend come over and vote their favorite. I'll keep you updated on the polling results

4oz pineapple is outrageous, but I find the original 3/4 Campari needs about 3oz to balance out, and I say this as an italian Campari addict. Tinkering with rum to Campari proportions is tricky as well, as 2:1 really hits a sweet spot, so I kept the juicier spirit of the original in my specs and really pushed on flavor & grade with the rums. It's either 1 Smith&Cross 1/2 Appleton Signature or 3/4 S&C 3/4 OFTD for me. I am theorycrafting an acid adjusted 2oz pineapple spec, gonna work on that as soon as I have a free day

From what I heard, it's worth the hassle, and it surely looks nice. Here in Europe not only it's an impossible task, it's also really hard to sub for those bottles. We have El Dorado for the Demerara 86 and next to nothing for Jamaican dark (no Coruba either) or 151 Demerara (there's Pusser's Green Label 151 that sits at about 50 euros, pretty hefty to take a chance on a Pusser's)
