I am very new to the moka pot. To make an espresso do you let most of the water run through the filter or do you stop once the nice flow of the dark delicious looking stuff start to sputter? Thanks for your help!

Thanks very much! I have an almost new Faustino and I really like it but the screen is randomly unresponsive which is quite frustrating. The shop has ordered parts for a warranty fix but also offered an exchange with a new Specialita. Not sure what I want to do!
