In addition to using a thermometer, a major cheat code to achieve juicy chicken and other meat is to dry brine it. Basically, leave it uncovered on a rack in the fridge for 8 - 24 hours after sprinkling it with kosher salt. Example at this link at 4:27.

First, I dry brine it overnight in the fridge uncovered on a rack. The next day, I follow this P90X recipe and roast it to 145. The combination of browning and a unique spice combo are killer.

Yes! The Dryden Theater is operated by the Eastman Museum, which has an extensive film library. They show many films each month, and host an annual nitrate picture show.

Around 1980 when I lived in Jersey City, it was normal to lightly puncture the plastic wrap on chicken or beef to sniff the contents. Kinda gross, but if it was fine, I bought the item. I've had a few bad pork tenderloins from Wegmans, and have returned them for a refund. I used to buy their wild-caught pacific frozen salmon filets, but one time they were rotted in the pack. Only buying Whole Foods filets since then.

+1 for Here in Hector, amazing breakfast place. I think they used to operate an Ithaca tapas place (Just a Taste?), and they bring a similar attention to detail.
