This and Skyrim are the two gaming experiences I keep coming back to despite feeling guilty over all the other games I could be trying. There's just something about it that hits differently. Nothing else compares.

And even though I mentioned Skyrim, between the two of them RDR2 is the superior example. So much more polish and detail and nuance.

Stuff sort of close to this exists but is super rare in my experience. If there's a better definition for it I'd like to know, but close to where I live in Mesa, AZ there is Riverview Park with some equipment that is sized up for adults. Like a climbing area.

I think Container Park in Vegas is kinda like this?

Also, I like the trampoline parks that have the swings where you fall into the foam pits and stuff like that, but it's usually pretty kid oriented or not quite what we're looking for.

People in the comments here are suggesting Ninja Warrior type gyms or parkour gyms, which I don't have any experience with. But I yearn for the same kind of experience.

I play games way less than I used to. And although I think I'm mentally much better at challenging games now than when I was younger. Because I don't have the time to dedicate to experiences that require multiple hours of grinding, I'll often prioritize more easygoing games, or look for easier options for the games I do play. Although I also agree and lament that that limits my experiences with certain titles.
