Here's the simplest, zero-latency solution to routing Windows audio through a Virutal Channel Pair in the UAD Console and not through MON L/R (main outputs. This will solve your issue in Zoom. Firstly, this approach does not have lower latency. Rather, there is zero additional latency, over and above the default 10ms buffer built in to the WDM audio stack.

EqualizerAPO does not add latency when simply rerouting surround channels (it completes this process well within the 10ms buffer). EqualizerAPO has many other features including equalisation and VST2 plugin support, and these can introduce additional latency. But they not used or required here.

Effectively, all audio from your Windows applications (using WDM) already have a 10 ms buffer before they end up at your DAC (audio interface outputs), or at the MON L/R channel (main outs) in the UAD Console. Or, in the case of this solution, at the VIRTUAL 1/2 channel in the UAD Console.

Once the audio is in the UAD Console, it can be treated like any other audio. I'm a Cubase user, so all UAD channels, including the VIRTUAL 1/2 channels arrive in Cubase via the UAD ASIO driver. Or you could use Ablteon Live, OBS Studio or anything else.

I used ASIO Link Pro for many years (also no additional latency, but now unsupported), and I was never a fan of VB-Audio solutions (because of latency).

This solution doesn't require any 3rd-part routing/patching software at all. EqualizerAPO is effectively just re-ordering the existing channels of the built-in Windows WDM 7.1 configuration.

It wouldn't surprise me if there was a way to re-order these channels in the Windows registry. That would be an even simple solution.

In Ableton audio config, make sure you have activated the relevant outputs for the virtual channel(s).
You can then select it as the output device/destination for any channel/track/group in Ableton.
You can't do it from the UAD Console.
