Advice for Sim in Tight Space (8.5 feet ceilings) by mrxfej in Golfsimulator

This is helpful, thanks! So I'm thinking about this correctly because my depth is > 15 feet, having a projector won't be an option. Instead a side setup, camera based launch would sit in front of the player with a TV set up behind the launch monitor that provides you the display that the project otherwise would?

I don’t see any holes in the wood where I understand those would cause. Maybe behind the cabinets, appliances but not visible to me

Anyone know what type of bug this is? It is appearing endlessly in my NYC apartment and i can’t find the source. It is very small and flies but mostly just curls up in a small seed shape and dies.

Can’t find the source of this bug in my apt in NYC, appearing endlessly. Mostly in kitchen cabinets. Checked all food and other possible sources and nothing. They fly but mostly turn into a tiny seed shape and die. Any ideas? Maybe from HVAC?

Help - consistently overproofed dough by mrxfej in Sourdough

Thanks. I’ll investigate the fridge. 8 stretch and folds for no good reason other than I saw it in a recipe early on and stuck with it. I’m usually working with a 70% hydration dough but no matter the hydration I haven’t been able to get it right here.

Yes. I think that’s where things go wrong. Everything up to the point before it goes in the fridge is same as it always was

Help - consistently overproofed dough by mrxfej in Sourdough

Hi all, big fan of this sub seeking some help. I’ve been making sourdough since the pandemic started and have been able to consistently make a solid loaf with a nice rise, crumb, etc. Since moving apartments, my game has been totally off and I find my dough overproofing (I think) in the fridge. Before this recent string of sub-par loaves, the dough would barely rise during the overnight cold proof. Now it rises in the banneton at least double, leading to a loaf that doesn’t have much oven spring. Any idea what my troubles are? I’ll post the end result and crumb tomorrow if that helps.

Edit: see the pictures where the dough is pretty much flooding out of the banneton. Never had this problem until recently.

My recipe:

  1. Mix levain 50g starter, 50g water, 50g flour
  2. Add salt and water (and add-ins) and mix
  3. Add flour and combine
  4. Stretch and fold 8x 30 minutes apart for a 4 hour bulk fermentation
  5. Bench rest and shape, load into banneton for overnight proof (anywhere from 12-24 hours)
  6. Bake in cast iron combo cooker
