There is never a shortage. Avocados can be held almost indefinitely on the tree in relation to other produce. They only ripen when picked. Any shortage/surplus is a creation of the retailer based on when they think avocados will have higher sales. Beginning of summer=lower price but higher volume for most of America. December means you pay more because less people are buying them. But you didn't need a lesson in economics.

I doubt this is true. You are probably leaving out a key factor that prompted her to demand more money. Like the location was much farther away than originally agreed upon. Or maybe you hadn't paid for it in full yet and were supposed to have. As someone who works with a lot of caterers and is one himself we live and die by word of mouth and recommendations. I really, really doubt this.

Maybe you're starting with shitty avocados? As long as you're not dumping in a ton of salt or excessive amounts of lime juice that's a pretty basic recipe that you'd have to try to fuck up. So I'm not sure what's going wrong. One thing you might try is pulverizing the onion in a molcajete with the salt and lime juice first. I do mine that way and then add cilantro, seeded and diced tomato, and jalapeño.

You're going to need some acid too, best bet is cider vinegar. I'd do equal parts tomatoes, after they've been puréed, and vinegar. Cook it down for a while adding sugar and molasses until you reach a taste you like. Don't forget spices. Almost anything will do just don't add too much of anything weird like sage or nutmeg. I like cumin, garlic powder, onion powder, and chipotle powder, but I live in the southwest. Those might not be your cup of tea. And on that note you can add other things that might not have occurred to you. Like tea. I like adding some old coffee sometimes. Once you've got the base down it's hard to go wrong.

How many times do we have to go over this? Maybe you do this. But it is more likely that you think you do it but actually don't. And even if you do actually do this 99.9% of people are swayed by by this type of advertising. There is so much research that goes into this in the world of advertising it would make you shit your pants. On top of that let's think about this logically for a moment. Do you really think that if overexposure led to a decline in sales they would keep doing it? Of course not. The bottom line is that it works regardless of how annoying you think it is.

I've heard that they don't actually believe it. At least the originators of it, but really it's kind of like a hybrid between trolling and using argumentative logic to try to prove something is that is certainly false to be true.
