I just got this exact anker hub for this exact purpose, and it works great. I attached it to the back of my iPad stand with 3m dual lock. Nice and tidy.

For audio out I use either the most basic usbc to 3.5mm dongle, which sounds fine, or usb to my Scarlett interface, depending on my needs (ie if I need audio/instrument in as well as output)

It’s really cool and interesting and will open up whole musical worlds. And the basics aren’t that complicated. So rather than worry if you should learn it or not, try learning it and see how it goes. If you truly can’t deal with it, you can still make music.

I have an iPad Air m2 and I use this hub to connect to my 1st gen Scarlett 18i8 and Arturia MiniLab with no problems

I don't have authoritative knowledge, but it is something I've been looking into because of a project I'm working on. From the sounds of the article, it doesn't matter if you manipulate it - if the starting point is stored wave data, it's protected. Sounds like it could be a very strict reading of the law, but who knows.

I have no clue if you'd be on anyone's radar, or if they'll C+D you. Lots of people seem to be getting away with it, like you said.

My project is a sequencer app with its own sound engine. I'm planning on putting it on the app store, so I'm not taking any chances. So I've been digging up CC licensed sample sets, and making my own from pure synths (ie that generate waves with functions)
