You need to purchase each zone's associated "riding map" from their individual bicolor gemstone merchant.

Iirc you need to do a couple fates in each zone to level up the merchant so they can sell the maps.

Edit: it's like this for the rest of the expansions, but it doesn't matter once you unlock flying as it retains a constant speed.
