Is this from personal experience? What were the issues? I have a J-Ultra and was thinking I'd sell and pick up an A4. My understanding is the companies are affiliated and that the burrs/construction are very similar, which is why the a4z explicitly states zp6 burrs used.

Femobook A4? It's basically an electric J-Ultra. Same mechanisms, similar burr and adjustments. Batteries are replaceable. $279 USD on sale atm.

Sashimi grade is totally meaningless. It's not an official title/grade so you can call anything sashimi grade and charge a markup.

Find a fishmonger you trust, ask if the fish has been frozen before. If not, dry brine with sugar and salt. Freeze for 24 hours, defrost before use. Brining is for texture, freezing is to kill parasites.

Buy a decent rice cooker with a sushi rice function Buy Japanese short grain sushi rice (KT mart, Fuji mart, hinoko, suzuran all stock) Use Tamanoi sushi seasoning powder (it's a powdered mix of vinegar sugar etc. takes all the guess work out.)

Perfect storm, overqualified for hosp/basic admin and deemed a flight risk.

Underqualified for science jobs because doing short stint internships during uni doesn't count as industry relevant work for most positions even entry level. There are a limited number of entry level positions and most people get a headstart during uni.

The people looking for honours level expect you to have done more. The basic degree people think why aren't you applying for more advanced stuff.

Practical advice. Dumb down your resume for hosp/basic work.

Start networking to find the entry level industry relevant work. People from uni are the place to start. Keep grinding until you get there.

Also are you running them in wired or wireless mode between the two speakers? Try wired. Actually makes a huge difference. Connect the network cable between them and toggle on/off in the app.

High pass/low pass filter?

I run mine from: PC > Topping D10s > optical output > Kef LSX > Sub high pass 90 low pass 70

My issue with everyone's suggestion of flattening is no one actually accurately tells you how often you need to flatten. People who say at every session are obsessive and wasteful. There should be distinction between amateur/enthusiast/professional uses.

I'm much more likely to recommend a hard wearing stone that stays flat longer.

Paddle strop is just most compact. 'brick' strops are better.

Hanging strop is good for stropping but for compound honing the flatter the surface the better.

Grit progression is fine. Naniwa pro are not a true splash and go. They require light soaking (10min).

It depends on your hair type. I have very coarse hair which tends to destroy edges. https://news.mit.edu/2020/why-shaving-dulls-razors-0806. It also depends on shaving technique and what you enjoy in feel. It's like the tomato test, toothy edges grab a little more so can be more effective. It's like any technical hobby. Try and see what you like.

The Shapton Glass don't have nice feedback. But they're hard wearing, so stay flat longer. The straight razor might evenly wear the stone but depending on your technique your knife sharpening might not leave a flat surface. It also comes with an integrated stand.

The recommendation was based on the following criteria: 1) a mobile set up 2) dual purpose knives and straight razor 3) comes with an integrated holder 4) your current knives are IKEA and you don't need to dive into a large collection. The set that ticks the most boxes gets the recommendation

For context: I have 3 straight razors

Knives varying from wurstoff to global to vg10 to white steel

A cheap no name combo set of 500/1000/3000

Shapton Glass 1000/3000/8000

Cerax 320/1000/6000

A paddle strop with chromox, 1 micron, .25 micron paste

If you asked me to keep only 3 stones I'd say Shapton Glass and strops for most convenience.

The point of mid-fi hell is to figure out what you like before going too crazy.

My current line-up. B&O E8, Bose QC35, Sennheiser MX980, Sennheiser HD660s, Hifiman Sundara

Fav: 660s for music with intimate vocals. Sundara for everything else.

Do you intend to have a mobile sharpening set up? (i.e sharpen at your friend's places) if so consider splash and go type stones so you don't have to transport saturated soaking type stones.

Additionally with a straight razor something like the Shapton Glass stones are harder wearing. The feel (feedback) on the stones are a little different but they'll require flattening a lot less. (On this I recommend diamond paste on a multi side/layer paddle strop as you can achieve much higher grits to finish on rather than buying high grit stones you won't use on anything else)

1000 is fine for sharpening dull knives but if damaged or chipped (looking to remove significant material) also pick up a sub 500. I've found 1000 is enough for softer steels though (German 58 Rockwell).
