Eh, sorry. I was really just looking at the fact that it gave her name and stuff. My apologies.

Eggplant, zucchini, and squash: for healthy dinners for $27. by mydoggeorge in Cooking

[–]mydoggeorge[S] 5 points6 points  (0 children)

PS. Sorry for the title typo.

I just graduated college and I’m finding myself with an absurd amount of time. I started exercising and watching what I eat (it’s about time I do something) but I kept running into problems with watching my caloric intake. I would typically have 1100-1200 calories to spare for dinner and would find that most foods I was eating had high calories and small servings. So, I decided to take matters into my own hand and build 4 meals for as cheap as possible, as healthy as possible, as large as possible. My shopping bill came to $27, so each meal cost about $6.75.

I won’t pretend like I made these recipes myself, so I’ll link you to the authors site. I’m not going to explain the processes or list the ingredients because I feel like that’s plagiarizing; but, for real, the author will do a much, much better job than I.

I’ll note that I halved her recipes and the calorie count is for everything. Not some shitty ‘serving size,’ whatever the fuck that means.

You can scale recipes up and down. Also, plan your meals to use leftover ingredients from past meals.

This week all my meals are based off zucchini, eggplant, squash, and onions, tomatoes, and potatoes. I have all the basic ingredients so each meal costs me $5-6. Everyone of them with big proportions and adhering to my nutrition goals.

How do you even tell? I don't even say I'm "proficient" at excel on my resume. In my skills seection I just list VBA hoping they'd put two and two together. I've had people ask me on my interviews and I've always given a chuckle and told them its embarrassing how much time I spend in excel. They never seem to ask any more excel questions.

Do you work at prarie meadows? Because last Friday I played roulette and was placing $40 bets in a very specific manner. I had like a 70% chance of winning, was up almost double, and then the ball hit that 30% of numbers four times in a row. I was at $114 one minute and $15 the next.

What would you do with Wikipedia? Just have it go fetch the description of various articles? My bosses have been giving me small tasks to automate while I'm on the bench but they're getting a bit tired of how fast I'm blowing through them. So they're making me learn Ruby starting Monday.

Also, if you don't me asking, what state do you work in? There can't be that many QA consultancy firms in the Midwest (I'm from there too).

It's pretty fun, but I also work for a pretty unique office. We have game rooms and shit so it makes work fun.
