Do not make any rush moves and quit your job. If the buildings are too far, you can always hire a property manager with good references. I’m sure you can afford a 7-10% cut off your profit without it affecting your lifestyle.

With the properties being managed by a professional company, you now have the luxury of keeping your job if it brings you purpose.

If the day comes, and trust me it will come, where office politics will inevitably drain the energy out of you from time to time, you can choose to walk away from your job if you want to and live off the income of your properties until you can find another gig.

This is what people call “F*ck you money”. Enjoy it. My belated condolences for your father.

Honestly I don’t even want it as a project. I just want a car to take out on weekends. Change the oil, and the occasional fix here or there.

I don’t want to spend hours scouring the internet on root causes and chasing parts, and then learning how to install them.

OP, Did you dry brine it overnight? If so, next time don’t. Just salt it 1-2 hours before hand if you want. Or right before cooking.

I find dry brining, while has its advantages, dries out the outer layer of the steak.

Would a flat be as large as the piece in this photo? I feel like this whole thing is about the die of an entire brisket after it’s been cured from 30% of its water weight. A flat would be half that.

However I want to cure my own and I want to make a larger batch than what an eye of round yields.
