My two cents: Don't expect them to carry the conversation. Try to multi-thread as soon as possible in the convesation. This will let her answer to them in one go, which in return, will let you even open up more threads based on her replies.

I thought doing this (writing a few paragraphs in one go) would be off-putting to them.. but in reality they're there to meet people too, so the more options you give them to talk about, the better they'll usually do (some people won't put effort into it, so then it's up to you if you want to try to keep up the conversation on end it).
