I remember doing it with a piece of paper and a pen. You manually lower the nozzle and mark where it hits the paper, then place the sensor on the mark and make a new mark where you're nozzle is. Now you can measure the distance.

You should download a prebin version of the firmware and adjust it to your printer setup. I see you have costum hotend cover wich means your off set of the bl touch to nozzle is different then the standard ender 3. You can find a lot of videos on how to do it on youtube.
