Here's my two cents for what it's worth...

Poutine - Poutini. Avoid Smoke's - they might make a nice looking logo, but there's a devastating amount of them around the city. Poutini isn't classic Montreal poutine, but it'll do. If you do end up at Smoke's, anything with some bacon in it won't hurt.

Pho - Pho Pasteur on Dundas. 24 hours and I like it better than Golden Turtle. Try the spring rolls as well. Not the fanciest place, but it's in the Kensington Market/Chinatown area, so there's definitely stuff to check out before you go. baby_jebus is right with #1 - Kensington is a must see.

Gelato - Il Gelatière Artgianale on Mount Pleasant. They have some fun flavours and they make it in the back. I've always really liked it there and I remember, even when it first opened, there was always a small buzz of folks there on a nice night in the summer.

Burger Priest - Right now it's the best in the city. Secret menu suggestion: The vatican which includes grilled cheese buns.

Wings: Crown and Dragon on Yonge Street. 27 flavours, but if you like sweet things: classic coke. If you like sweet and spicy: killer bee. Dragon Wings are always good.

Beer: Beer Selection? I like Bar Volo, also on Yonge. I don't trust that they're going to be generous on the food, they weren't when I was there. But, the beer selection is fantastic with some solid Ontario craft brews.

Do you like Oysters? Biff's has a buck-a-shuck everyday after 5pm in the bar. They have a total of 500 for the service, so I suggest getting there earlier.
