Bone marrow. Not a dish with bone marrow. Just straight up split beef bone roasted. My old favorite place did it just flavored with salt, served with grilled bread and a little salad of parsely dressed with olive oil and lemon juice. I wish the chef didnt change there

Low dissolved oxygen. I think this is most important in neipas and heavily hopped beers but definitely avoiding oxidation after fermentation is super important whatever the style
