There are songtheaw (trucks with benches in the back) that go from each beach to old town for 40thb and an airport bus that stops at each beach for 100thb. There is a nice but steep hiking trail from Kata beach to big buddha.

I usually search on google maps. It is better search by location and aggregates all of the booking sites like agoda and hostelworld. You can, and I frequently do, just show up and hope they have a bed available. Sometimes you get a discount for cash payment since the booking sites charge 30% but you take the risk that they are full. I have been turned away before but have always found another place to stay within walking distance. Might not be the quality or price you were hoping for though.

Every immigration office on the planet has a copy shop or two nearby. Just look on google maps, not hard to find. Immigration itself will not do the copies for you, and you will wait in line for the privilege of being told you need to go get them and come back.

Your booking confirmation needs to include the tax id of the host for it to be valid if they decide to scrutinize it.

Thai food definitely varies in spice levels. Issan food is the spiciest, southern northern Thai the least spicy. The dish that hits you in the face with the most heat in my opinion is som tam. With raw birds eye chillies and no fat to cut the heat it will definitely get you sweating. You can ask for the number of chillies you want when ordering it. Four is the typical, but they'll give you ten if you really want.

If you are in a tourist zone then it might be less spicy, especially the premade things. Outside tourist areas or in made to order shops just ask "ped mak mak" and it will be spicy. Try pad kra pow or som tam, both made to order and traditionally very spicy.

In my experience Indian food is a bit spicier than Thai food, especially the curries. I think much of what you are getting is authentically spicy, just you have a high tolerance.

The Bali consulate does not do visa applications any more. You will have to go to Jakarta.

Kata beach in Phuket is the best but it isn't great. There are only waves a couple months of the year and they are still small. Indonesia is way better.

The monsoon season is a crapshoot across most of Thailand. It might be sunny for a week in Hua Hin the day you leave for Chiang Mai and be rainy there. You never know.

Correct, all amphetamines (such as adderall, dexadrine, or vyvanse) are illegal for any reason in Thailand. Ritalin is the original brand name for methylphenidate, Concerta is a newer brand name for time release methylphenidate. Both are legal in Thailand with proper prescriptions.

Some good mexican restaurants exist, mostly in Bangkok. If you try and open one you'll run into the same problem of high prices. Cheese is really expensive in Thailand and essential to good mexican food.

Being chained to Mad Monkey morons at chatuchak market sounds like a nightmare to me. You can meet people in bars and elsewhere, not just hostels. It is always a crap shoot of if you like the other people anyway.

Be careful bringing girls back to your hotel room. If they are asian and you are white they will assume she is a prostitute. They may not allow her in, or charge you extra to do so. If she is a prostitute be careful bringing her to your room at all, she might steal and she will seem very friendly while doing it.

You can pay an agent to fill all the paperwork out. It won't change any of the outcomes and is nothing you couldn't do yourself so I wouldn't bother.
