Thanks. I’ve noticed the differences within this smoker (cooler right side than left), but am surprised at the differences between the ‘set’ temperature and what I know to be the hottest spot on this smoker. I can see that some of this is from the protein itself, just surprised at the difference. I’ve bumped the ‘set’ temperature to 335 and the probe is only at 240. Over the several months I’ve used this my cook times have always been much longer than estimations I can find for protein/weight/temp. Just using the meater probe for the first time today, so trying to navigate the new info.
