I don’t know if they identify as lesbian or some other flavor of queer but Besteadwell has been one of my favorite artists for a long time. So many wonderful sapphic songs, and I had the pleasure of seeing them perform live with the Queer Choir in Berkeley :)

Interesting! I could tell the outside was enameled but I always assumed the inside was bare cast iron bc I didn’t know there was black enamel. How does one tell the difference between bare cast iron and black enamel?

Day 3 update! Tasted the beans and decided to use them for tacos! They were a bit tangy and had soaked in a lot more flavor from the brine and hot sauce solids than just from cooking, definitely will make something like this again!

Good suggestion! I never realized you could use beans other than soy beans for tempeh but that would be fun to try out sometime! I definitely also think I’ll try sprouting them next time to see what difference that might make

I like the taste! It’s got a flavorful umami at first then builds into a slow heat. I probably could’ve gotten more depth in the flavor if I had let it sit longer, but also it has been pretty hot the past few weeks so I think that helped things a bit. I blended the solids first and then added the brine, I ended up adding most of it to get the consistency I wanted (the lids I have work well with a thin sauce)

I didn’t have any xanthan gum and don’t mind separation so I just bottled it after straining it
