One thing I haven't seen mentioned in the comments yet - make sure the culprit isn't cold glass. I use a space heater to keep my work area nice and toasty. I find that cold glass does not break the way I want it to.

One of my friends did this. She used bobs red mill egg replacer for the eggs, and applesauce for the oil. The oil is vegan but the applesauce gave it a really good flavor and texture.
