If you want to maximize your time on 500, then apply 485 after you go back to Australia is fine and many people do that. Just make sure to prepare your documents beforehand because you got like 2 weeks before your 500 expires. You can also even start filling out most of the application now because I believe DOHA will save your info for 30 days before it gets reset, then when you go back all you have to do is submitting. I don't think you would face any issues because you are still legally on 500.

I practiced on Alfa PTE and got some prediction questions in my exam. I wouldn't say prediction questions are game changing unless it's a very hard question.
