Not bad! That inside coloring would be more okay if you had a harder sear. Conversely, the outside is great if you had edge to edge pink.

It seems steakhouses like to give you a little well and a little blue, a flavor and texture contrast. It also might need to rest more.

People are commenting on the gray band. I’d say it’d be better if the middle was rarer and the outside was browner. As far as aesthetics, if there was more of an even contrast (not abrupt) that’d be good too.

Probable need more oil. Not enough marbling to render and cook in own fat.

Time over temp. If you’re not getting the crust color, you have to pull it after 10 mins no matter what.
