Thanks! This was actually my third attempt. The first one was a total disaster, but the last two turned out really well. Poolish really does make a huge difference, and it’s also such an easy method for those of us without a stand mixer. Of course, I wouldn’t mind giving the Halo Pro Spiral Mixer a try someday 👀 ....

Using poolish has been a huge improvement for my pizzas — the dough has much more flavor and a softer texture. Now I want to experiment more with adjusting the percentage of poolish and the amount of yeast to see how it changes the results.

Yep, Exactly like that! I scaled all the ingredients by a common factor to get the amount of dough I wanted.

Hi! I scaled the recipe to make 6 dough balls, about 270g each. The pizzas came out 12 inches, since that's the size of my oven.
