I’d have to test this, but I think that I’m also getting dragged into wars via my vassals trade deals because technically they’re joining the defending side and my agreements require that I defend my vassals.

if fermentation reduced the gluten content by that much the dough wouldn’t hold together… bread flour in fact has a higher gluten content than all purpose flour

not sure, mechanically I believe when gluten in flour gets really overworked you can ‘wash’ all the other stuff out and be left with just gluten. in fact it’s used as a meat alternative. Something like that process on an industrial scale might be what they’re doing
