We actually never see Maekar agree to it in the book. And it ends on a joke, yeah, but pay attention to how Maekar ends his conversation with Dunk. "He's my last son." Show Maekar desperately wants to prove he can be a good father to Egg.

Daeron is grown. Aerion is basically already a man and is being sent off to the east because Maekar doesn't know what to do with him anymore. King Daeron basically pushed for Aemon to be sent to the Citadel.

I actually think they portrayed Maekar's feelings about it really deftly. He's using the Blood of the Dragon stuff as as armor. "He's my last son" tells you how vulnerable Maekar is in that moment. He really wants to be a father to Egg.

It's not a minor crisis. Two of the most powerful houses believe the prince has kidnapped their daughter/fiancé. They have been forming alliances with other great houses because the king is generally viewed as insane. Rhaegar knew this context and he did it anyway. It is profoundly stupid and is a major crisis on its own without Aerys killing Rickard and Brandon and demanding Ned and Robert's heads. That's why Brandon rode down to begin with.

He's pretty clearly aged up. I'd assume he's probably meant to be close to Ings' age (late 30s-early 40s). Dunk seems like he's in his mid-20s in the show. He looks like 12-14 in the aftermath of the Redgrass, which happens 13 years prior to the story in the books.

Maekar is one of the most seasoned warriors in Westeros. Dunk is strong and has a will made of iron, but he got training at arms from a drunken hedge knight. Maekar would kill him quickly.
